CHAMPAGNE CHARLES CLEMENT – Millésime 2007 – Natura

Original, modern and luxurious bottle.

Extremely fine bubbles.
Bead of scattered bubbles, persistent.
Gourmet and radiant aromatic compilation.
Generous aromas of honey and beeswax, coupled with seductive touches of pastries and roasted coffee, expressions of the fullness of the cuvée obtained by 10 years of patient ageing on laths of the bottles with autolysis of the prise de mousse yeasts, before riddling and disgorgement.
Later, the aromas of apple, pear, candied citrus fruits and white flowers, signatures of the majority of Chardonnay (42%), harmoniously mingle with scents of red and black fruits subtly spicy, characteristic signs of the black varietals (36% of Pinot Noir and 22% of Meunier).
Joyful liveliness at the opening, reinforced by the absence of dosage (no sugar added at disgorgement).
Later, the mouth becomes caressing, sensual, warm and enveloping, highlighted by the creamy effervescence.
Deep and tasty finish, underlined by a life-giving breath, with notes of apple and walnut.
Great length on the palate.
For this Millésime 2007 – Natura, Georges Rognon, œnologist and cellar master of the Champagne house Charles Clément, was able to select his best grapes in 2007, harvested by hand at perfect ripeness, to revisit with talent the clay-limestone slopes around Bar-sur-Aube, and to offer us a rare champagne.
To taste as an aperitif or during a meal, with a tenderloin, goat’s cheese and apricots fried with honey, for example.
Founded in 1956, the wine growing cooperative of Colombé-le-Sec and its surroundings now gathers 75 wine growers to cultivate with passion the 120 hectares vineyard spread over the beautiful terroirs of Bar-sur-Aube, planted with 75% of Pinot Noir, 16% of Meunier, 8% of Chardonnay and 1% of Pinot Blanc. 50,000 bottles of an inspired range of champagnes are produced with care each year and marketed under the brand Charles Clément.
