CHAMPAGNE LALLIER – Ouvrage Grand Cru Elevé sous liège
Around 52 euros per bottle
Pale gold, bright.
Radiant breath, reinforced by the long period between disgorgement on the spot and marketing (5 months).
Aromas of candied citrus fruits, apple and white flowers, highlighted by an iodized and mentholated breath, heady signatures of the Chardonnay (30%), carefully selected in the Grands Crus of Avize and Cramant, in the Côte des Blancs.
Later, the Pinot Noir of the Grand Cru of Aÿ (70%) gently establishes itself, with fragrances of red and black fruits supported by the generous maturity and its gentle touches of chocolate and roasted coffee, obtained by 5 years of ageing on laths of the bottles with traditional corks held by a clip.
Vertiginous purity, obtained by the perfect control of the malolactic fermentation of the base wines and by the adjusted dosage, with less than 6 g/L of sugar added at disgorgement.
Highlighted by tension and minerality, the mouth becomes a creamy caress, coupled with a remarkable complexity definitely thanks to the use of particular yeasts, specifically selected by the House for the alcoholic fermentation of the lallierbase wines.
Fabulous length on the palate.
With this cuvée Ouvrage Grand Cru Elevé sous liège of the Icône range worked by hand, Francis Tribaut, cellar master, was able to compose the blending of vintages to offer us an exceptional wine.
To taste in wine glasses, as an aperitif or during a meal, with a lobster and combava, for example.
Founded in 1906 by René Lallier, the Champagne House Lallier continues its endless quest for excellence, between the cellar of Oger and the cellars of Aÿ. Since 2004, under the leadership of Francis Tribaut, visionary œnologist, the House is based on its vineyard of 15 hectares, exclusively planted with Chardonnay and Pinot Noir, mainly in Grands Crus, to shape with passion around 400,000 bottles per year of high level Champagnes.
