The Chardonnay, exclusive varietal, carefully harvested by hand in 2010 in the Grand Cru plots of Le Mesnil-sur-Oger is revealed heady with its scents of apple and pear compote, citrus fruits and white flowers, driven by an iodized and mentholated breath.
Patience is rewarded by the appearance of sensual touches of caramel and toast, characteristic signs of the well-defined maturity of the cuvée obtained by 7 years of ageing on laths of the bottles, with patient autolysis of the prise de mousse yeasts, before riddling and disgorgement.
Vertiginous purity at the opening thanks to the rigorous selection of the first juices (cuvée) during the soft pressing of the grapes, reinforced by the adjusted dosage with 3 g/L of sugar added at disgorgement.
The mouth becomes a sensual caress, highlighted by the vibrant minerality of the chalk, supported by the silky effervescence.

Heir to over a century of champenois tradition, Valérie Moncuit accompanies her mother Nicole on the way set by her grandfather Pierre Moncuit, to enhance the soul of the blanc de blancs Grands Crus. A 20 hectares vineyard cultivated with love, exclusively planted with Chardonnay, of which 15 hectares in the exceptional Grand Cru of Le Mesnil-sur-Oger, and a gentle and accurate œnology in small thermo-regulated stainless steel vats, give birth each year to around 200,000 bottles of exceptional champagnes.
